Bulalo is a cut of beef popularly used for cooking in the Philippines. It is actually beef shanks with bone marrow inside and some meat around the bones. While it is usually cooked into a soup, this recipe turns it into a stew. When kitchen tester Tina Diaz tried this at home, it instantly became a family favorite.
Now let's prepare the ingredients:
- 1/4 cup cooking oil
- 1 kilo beef bulalo, sliced into 1 1/2-inch thick pieces
- 1/2 cup sliced onion
- 1 clove garlic, crushed
- 2 tablespoons soy sauce
- 1/2 teaspoon peppercorns
- 1 cup tomato sauce
- 1 cup sliced button mushrooms
- 1 bay leaf
- 1 teaspoon salt
- 2 cups water
Procedure:
- In a large pan, heat cooking oil and brown beef slices. Remove beef from heat and set aside.
- In the same oil, over low heat, saute onion 2 to 3 minutes. Add garlic and continue cooking for another 2 minutes.
- Stir in soy sauce, peppercorns, tomato sauce, mushrooms, bay leaf and salt.
- Return beef to pan. Simmer for a few minutes. Pour in water. Cover pan and simmer over low heat until beef is tender, about 1 hour.
- When done, arrange bulalo slices on a platter and pour sauce over meat. Serve hot with rice.
