Today we are going to make or cook an Asparagus with Salsa. This is a very healthy recipe for all of you.
With the tartness of the salsa and the mild taste of asparagus, this refreshing side dish goes well with fried or roast meat dishes.
Now lets start by preparing the ingredients that we need.
- 1/4 kilo fresh asparagus spears
- Water for boiling
For the salsa we need:
- 1 1/3 cups cucumbers, diced (about 2 small pieces)
- 1/4 cup diced red onion
- 1/3 cup seeded and diced bell pepper
- 2 teaspoons dried basil
- 1 tablespoon calamansi juice
- 1 teaspoon salt
- 1 teaspoon sugar
Now lets follow the procedure:
- Slice off tough bottom ends of the asparagus. Boil enough water to cover asparagus. When boiling, add asparagus. Simmer, covered, for at least 2 minutes.
- Remove asparagus from pan. Immerse in a bowl of cold water then drain well. Set aside.
Alright now we are now going to make the salsa:
- In a bowl, combine cucumbers, onion, bell pepper, tomato, basil, calamansi juice, salt and sugar. Mix well.
- Arrange asparagus spears on serving plate and pour salsa on top.
