Now, let's prepare the ingredients that we need:
- 1 kilo female crabs
- 1/2 cup calamansi juice
- 1 tablespoon coarse salt
- 2 cups water
- 1-2 tablespoons cooking oil
Now let's do the procedure:
- Wash crabs well under running water. Cut into half crosswise.
- Remove the aligue (Crab Fat) with a fork and place in a shallow bowl. Mix until very smooth.
- Cut the crabs further in half. Place the crabs in a casserole. Add calamansi juice, half of the garlic, salt and water. Bring to a boil and let boil for 15 minutes. Drain into a bowl and reserve the liquid.
- In same casserole, heat oil and saute the remaining garlic until golden brown. Add the aligue and cooked crabs.
- Cook for 5 minutes on high heat, stirring occasionally. Add the reserved liquid and bring just to a boil. When mixture boils, turn off the heat. Transfer crabs and sauce to a serving platter.
